Roast Rib of Beef

4-6kg rib of beef
2 tbsp olive oil, butter or dripping

Serves up to 10 people
Various cooking times depending on taste (see instructions)


Preheat the oven to 220*C/400*F gas mark 7 and remove all the shelves except for the one for the joint, Place the on a large roasting tray and massage a couple of teaspoons of olive oil,butter or dripping into the meat. cook for 30mins, after which it should be browned and sizzling. Reduce the oven to 160*C/325*F/gas mark 3.For rare beef you should allow another 10mins in the oven per 500g for medium allow 15mins per500g and for well done 20mins per 500g When you have taken it out of the oven you must leave it to rest for at least 30mins before serving
